You're right, it's best to use fresh fish. Also, sushi can be rather difficult to make, especially if you don't have the proper types of rice or fish. Many top sushi chefs spend years honing their technique. My suggestion if you really want to try quality sushi is go to a nice Japanese restaurant. I don't know how far you live from Oslo, but there's bound to be an ethnic Japanese restaurant there somewhere.
