We have fire type zanpaktou (Captain commander Yamamoto Genryuusei), ice type zanpaktou (Hitsugaya Toushirou and Kuchiki Rukia), Wind element (supposedly Captain Kyoraku), Water Element (Captain Ukitake) and non-elemental zanpaktou like Ichigo's zangetsu and Byakuya's Senbonzakura (unless flower were an element too
