I also recommend Suikoden III (which has a very strong replay quality). From the reviews I've read, Suikoden V is also supposed to be very good (Suikoden IV apparently sucked royally). These games are listed in no particular order, but the Tales games are definitely my all-time favorites.
Although I haven't gotten the chance to really play them, the dot hack games seem pretty cool as well (I lost my data on the first game, and I never picked it up again; I have read reviews of them though). However, unless you have seen at least one of the .hack anime, you may be a tad confused as the game series sort of wraps up the loose ends the anime left behind.

Wow, like every game you mentioned I have played, or want to play.
Grandia II is so cool, one of the best games ever, I'm glad you mentioned it. There is a Grandia III and it is very worth playing. It was released by SqaureEnix so you can imagine how good it is!
I've always wanted to play the Star Ocean Games, and Suidoken III. Everyone says that part IV was crap and even you said that.
I had a .Hack/Sign game. I didn't play much. I thought it sucked that I had to play a certain character. I couldn't be a mage or a swordmaster...
I loved the .Hack/Sign anime, with Tsukasa, Subaru and all them. It was great.
