It's difficult to list must-watch anime, because it's all based on what genre of anime the individual is looking for.
I've got a personal preference for Japanese historical anime, so my favorites have been:
Rurouni Kenshin
Tsuiokuhen (Samurai X: Trust & Betrayal)
Samurai 7 (not technically Japanese history, but close enough ^_^ )
and Shura no Toki
I've also liked Fruits Basket, Kino's Journey, Fullmetal Alchemist, Gundam SEED and Gundam Wing... My tastes are fairly widespread.
