For starters it's wrong that his dad is a part of Akatsuki.
Secondly, Akatsuki want Naruto because he is a Jinchuuriki, which is someone that holds a Bijuu like the Nine Tails fox. Gaara and other people like him are also called Jinchuurikis.
Ultimately, Akatsuki have been collecting all these people with demons inside them for some kindof ultimate plan that us Anime watchers haven't got to yet
All we've seen is some "thing" sucking the Jinchuuriki out of the person, i.e. Gaara in this case.
