I feel the same exact way. I liked Dragon Ball because even though it was "Goku's story", everyone did do something. All the characters who had the potential to grow and become stronger did, imo, even though Goku always saved the day.
Now, with DBZ, it started off pretty good imo. It was time for the next generation to deal with the oncoming of enemies. I liked the fact that the story was going to focus on Gohan and his trials and tribulations. The Saiya-jin saga, in my opinion, is the only saga that was handled right in this regard. IMO, the series was still
too Goku focused, even though the story was supposed to be about Gohan.
With GT, I felt that the series started off fine since it actually felt like "Dragon Ball". I liked Pan too since we can finally see a female fighter do something for a change. Chichi in Dragon Ball was cool, and she was a fighter, but, she settled down and it was rare to see her fight, but it was nice to know that she was the one to train Goten. Anywho, GT had the problems you mentioned. Too much Goku...again and it became too much like DBZ.
