I stayed in Hiroshima when I visited Miyajima, as do many other people... there are not all that many hotels on the island, and many of them are more expensive, upscale places. So most people looking for affordable accommodations have to stay in Hiroshima unless you book well ahead.
As for restaurants, many are not open for breakfast, only opening around 11 AM for lunch, and then closing around 9 or 10 PM after dinner (though some places stay open till midnight or later, especially combination restaurant/bars.) Since I'm not a fan of traditional Japanese breakfasts anyway, I usually went to either a grocery store, a mini-mart like 7-11/Lawson's Station, or a bakery, all of which are open in the mornings. You can grab something to drink (milk, orange juice, coffee, etc), some pastries, and some fruit for a very cheap price and get going on your way very quickly! This was what I always did while traveling!
