Squeenix made a technical demo back in 05, shortly after Advent Children I believe, showing what FFVII would look like if remade for PS3.
An article at the time basically said that it was possible but all the people required to pull off such a feat were tied up on various other projects, and even then with all the people they had working on it would take over 2 years. In short squeenix eloquently said that it was not feasible at the time, but not out of the question.
