Even though this is the Japanese food forum, I'm Viet so I think I can help you out.
I have a feeling you're talking about giò ḷua (pronounced yaw loo-wa). It's a whitish Vietnamese ham/meat-loaf thing that (as you described)can have a tofu-like consistency.
Amm.. and sometimes it's also called chả lụa .
