From your avatar, I will guess that your a lady. I am strongly associated in the seafood business. So I know the bads and the goods of sushi quality and circumstances. I don't want to get too techinical but let me explain briefly.
First of all, if your going to only order fried rice, I recommend Pei Wei. Sushi Restaurants are way too expensive for an entry like that.
Fresh Salmon- Fresh Salmon has contains omega 3's for brain growth for prenatal infants. Omega-3 fatty acids seem to have the ability to regulate and lower cholesterol levels in the blood, as well as improving the ratio of good and bad cholesterol. It is this ratio between good and bad cholesterol that is thought to play a key role in heart attack risk. It is also very healthy for women. In order, these are the best qualities of the types of salmon. Scotland Salmon, Atlantic Salmon (Different countries are graded differently too, majority are in Canada.. they're okay), and Chile Salmon. These are the main Salmon products out to Japanese Restaurants.
Fresh Tuna- Tuna, an excellent source of lean protein, vitamins and minerals, is a wonderful way to excite the palate while maintaining a balanced diet. However, tuna has more to offer than just great taste and nutrition. Tuna can also help lower blood pressure and cholesterol. Research has shown that omega-3 fatty acids, found in abundance in fatty fish like tuna, can help lower the risk of heart disease, ease the pain of arthritis, reduce asthma complications, and is essential in the growth and development of young children.
Like any other food product, even your vegetables, has bacteria and germs living on it no matter how clean you clean it! That is why everyone takes a medicine every 6 months to clear their stomache system out from bugs, worms, germs, etc. Fresh Fish has a higher chance to provide these germs because it is Fresh. But, it is not too much of a big deal to be afraid about it.
Also, know that the lower the fish is living in the sea, the more bacteria it will carry. For example: Flounders. But long as its cleaned and prepared correctly, you'll be fine. Just note that if you eat lot of fresh food, make sure you keep your system clean every 6months with that medicine. I don't know the name but a local pharmacy knows.
