typically it's diced hamachi (Yellowtail), tako (octopus), hotate (scallop), mushrooms (whatever we have laying around), and white onion mixed together, baked in an oven, then rolled.
depending on the chef whose making it, some shichimi togarashi (japanese seven spice powder), chili-sesame oil, sesame seeds, and mayonnaise are added before, during, or after the fish has cooked

in this particular instance, my coworker cooked all the solids by themselves
then topped the cut roll with a sauce made of mayonnaise, sriracha, a bit of lemon, sugar, some tobiko i believe, sansho, and then garnished w/ green onions x]
