Is suppon made from any available species of turtle or just from the soft-shell turtles? Here in the U.S., most turtle soup uses snapping turtles because of their availablility and because several others that used be harvested for food are now in danger of extinction.
I have heard of the turtle blood being served, but not with anything in it.
