I agree, the list goes on, but then I don't think Tokyo has anything that can really "represent" Japan, but it all comes down to if you want something like that (which will means something more traditional and have some sort of cultural representation, I personally like those Daruma dolls) or if you just want something from Tokyo that you can consume/use
