The souvenirs I've bought back from Japan which most fascinated my friends were those plastic food models most restaurants have on display outside. I only know one place in Tokyo where they're sold, in Asakusa on Kappabashi street. All the stores there cater to the restaurant trade, you can buy beautiful Japanese crockery, signs, cutlery etc. There are also a few shops who sell traditional Japanese kitchen knives which would also make a good souvenir. There are a few stores which sell the plastic food, they're really amazing. The stuff isn't cheap though, a piece of maguro sushi is about 1000 Y, a mug of beer around 3000, definitely worthwile to go see though.
