Another option to consider is one that I was offered recently for one of my parties. Invite a sushi chef to demonstrate his skills and offer to pay for whatever ingredients he wants to use. It can't hurt to ask a sushi chef if he knows anyone who would be interested.
Ironically, I have 4 friends who could have done this beautifully, but the chef (a total stranger at the time) overhearing me discuss possible menus just stepped up to the plate and offered. Turns out he was single and didn't know too many people in the area and thought it would be a good deal for me and for his social life.
Just before you do this set a budget. You don't want to go broke just on the food.
