I agree with you there. ALL Final Fantasy music is epic, even the FF XII soundtrack which wasn't Uematsu's work.
As for movie OST and it's composers I'd go for:
Vangelis, for his really epic scores like the "Chariots of Fire" and "1492: Conquest of Paradise". But I like "
Blade Runner" most, probably because of how Vangelis tried to depict the future.
Joe Hisaishi, he really made some awesome music Kitano's for Miyazakis films. I like to exclude "
Kikujirou" and "Spirited Away" as my favourite.
Ryuichi Sakamoto. When it comes to movie soundtrack I like most of his scores, his famous "
Merry Christmas Mr. Lawrence" score. , "Snake eyes" which was very different from the movie itself and wasn't suitable for it, but, nonetheless, really good, "Gohatto" which gave a really mysterious atmosphere to me, and "
Tony Takitani" which has some of the most depressing tracks ever.
