As a grammar discussion, it is "私はコーヒーを飲みたくありません。" in negative.
However, if I am asked "コーヒーを飲みたいですか？", I would reply "いいえ、結構です。" or "いりません。".

飲みたくないです is certainly more commonly heard than 飲みたくありません.
