こんこん is short form of こんにちは or こんばんは。I'm not sure if other people use, but my friends say that too

今日の天気は良いです。 is OK, but in my opinion, 今日は天気が良いです。better.
今日の天気は良いです sounds like you had a bad weather day before, so now you say today is good.
And 天気 is weather but it's just for sunny, cloudy or rain like that. Not for hot, warm or cold. So if you were to say "the weather today is good because it's cool"... You don't use 天気.

僕は秋には元気になります。秋が好きです。夏は好きではありません。
You need to use the same form in a paragraph. If you used です、 then you need to use polite form for next sentence too. 秋が好きです→夏は好きではありません。
