I have been advised that there is no visa for foreigners any more for that sort of work since Lucy Blackman but I am coming from Australia and have a working holiday visa so it's not limited to industry like entertainment visas for example and don't require sponsorship either. It seems to be the only loophole around it.
I've already got a job offer in Ginza so I'm gonna give it a try and I'll report back
