I'm actually quite shallow.
The first thing I notice in a guy is how pretty he is. If he's below average, he'll be forever stuck in the friend category.
And I hate being that way, but I can't help it.

That established, Asian guys seem very prone to prettiness, as do some Italian.
I'm definitely most attracted to Asian guys, except...

I can't be physically or sexually attracted to people who are shorter than me.
I don't know why, and there are few exceptions to the rule.

Once I get over the appearance of a person (I know, how bad is that?), personality starts getting some say in the matter.
He has to be a fairly nice guy. If he has a problem with me spontaneously poking him in the face, or hugging him for no reason, then he's definitely not for me.
It helps if he's slightly sadistic 9I know, direct contradiction to the "nice guy" thing, right?)

It also helps if he plays an instrument. Bass guitar, double bass, drums, piano, or vocals, preferably.
