That is done basically at home only. I'm one of those people who do it.

What you might want to be looking at is the Nagoya-style "Miso-Nikomi Udon". That is legit cooking. The robust Nagoya-style Red Miso is used and the well-known chain named Yamamoto-ya serves only that throughout the year. They cook and serve it in clay pots.
