When I think of pudding i'm heading for that British umbrella term that generally means desserts. Especially steamed ones. As for flan; that to me is the kind with a pastry or sponge cake base. Kind of like a fruit pie without a lid.
Flan is a spanish custard (faintly vanilla) with a glazing of caramelized sugar (no milk).
