I defintiely not common, but it does really exist. (first hand knowledge)
The biggest problem is that the guests need to eat fairly quickly because of the transference of body heat to the food. Sushi is not meant to be served room temp. and the nerves of the "serving table" tend to raise the body temps a bit. The leaves under the portions are for visual appeal, but even more so for practicality. Rice won't warm up or stick to the leaves as much as it would on bare skin.
This has been an entertaining venue with other foods in the U.S. before I ever saw it done with sushi. But the portions for sushi work better than the other cuisines I have seen it done with and the display is far more appealing.
