Best anime, that's a tough one.
I would recommend Legend of The Galactic Heroes to any serious anime fan, its long (120 eps.) complex, and just damn cool on every facet.
Monster (74 eps.) is another favorite of mine; very intense, thought provoking and strange. Its one of those stories that you would never see in American media.
Sentimental favorites:Battleship Yamato, Macross, DBZ, Cowboy Bebob, Welcome to the NHK!.... really too many to list.
