助ける is most often used to mean "to save someone from a serious or dangerous situation". If you are about to drown in the river, you say 「助けて～～！」. You never, ever say 「手伝って～～！」.
手伝う is most often used to mean "to help someone with non-serious, non-life-threatening matters". Moving furniture around, helping around the kitchen, translating a phrase, helping a foreign tourist buy a train ticket, etc.
My observation is that Japanese-learners tend to use 助ける way too often.
