「食いつきよう」 ＝ 「食いつく様子（ようす）」
「よう」 means "the manner in which something is done".
「食いつく」, in this phrase, means "to jump at (a topic)"
「ものすごい食いつきよう」 therfore means "the extreme manner in which someone jumps at a certain topic"
