I'm not sure if "onnanoko" is the correct word to use in this situation, but I think it is!

Of course you can also drop off the 私は (watashi wa), because the context is implied.
I'd say :

日本人の女の子大好きです。 

as you are talking about women in general and が suggests here that it is YOU who likes them and not THEM liking something else.

I can't explain you the grammar because I am not a language teacher, but は would be used in this context.

日本人の女の子子犬すきでしょう。

Which means, "Japanese women like small dogs, right?"
