I dunno, maybe some "how to draw" classes, on certain Anime characters.
Or just have a theme of a particular Anime every month and stick to it. Like Naruto one month and something else the next month etc. Maybe you can Cosplay or whatever for that Anime or just watch it, I dunno. I would suggest including culture lessons with outside guests, and even simple language lessons. You could have a day where you cook a simple Japanese dish, and then enjoy it while you watch an anime episode. It should be mind expanding, not just an excuse to watch TV at school, but I think you have a good start.
