Do you have a local Japanese restaurant? That's where I would start. Ask the staff how to become one. You might eventually get lucky with a job where you can begin to learn basics.

I don't know much about this school. Or ask some Sushi restaurant for apprenticeship. (it will take ages) Tokyo Sushi Academy | Sushi school in Tokyo for professional sushi chef course and for sushi workshop in Tokyo |

Interesting topic,
Yes i agree with Taln, start local and work up. Maybe you will find somewhere to take courses or be recommended by the restaurant where to start looking. Learn the Japanese traditional way of making sushi then you will be world class |

as with anything in this country...
the best way to get about... is to have connections >.>'' i got in because my dad knew a guy who was the exec chef of some restaurant... and from there, i used the experience to go restaurant hopping ^_^ In the shadows beneath the trees he waits.
