Question about いつ
 
Okay, I know itsu can be used for 'when' question ex.. when are we going to eat? 「いつ食べますか?」but what about for thing like.. When you finish this I'll be happy, or Ill pay you when you finish, or when you can do this then your ready..

If so then is there any special way in which it should be used that way. and if not what would be used?

You can use 時 as 'when'

eg.
フランスへ行った時、ワインを飲みすぎた。
When I went to France, I drank too much wine.

Not a great example but I'm pretty sure you can use it like that, although you may be safe waiting for another response to confirm it :p

I am going to ask you something maybe a bit silly, but I didnt understood things very well "いつ" (itsui) also means "when" right? If I dont remember the kanji I can just say "いつ"?
and How do we pronounce "時" ? Is it the same?

First of all, you need to totally disregard English when learning Japanese and I do mean it. You can't think in English and speak Japanese, it won't work. There is no one word in Japanese that functions exactly the same as When in English.

いつ can be written as 何時 but usually it isn't because なんじ (what hour of the day) is also the same Kanji.

いつ is used to denote "what time". 時(とき) is used to say the time that x occurs.

いつ日本に行きますか?(Literally) What time period will you go to Japan?
日本に行った時に声をかけてください。 (Literally) At the time that you go and arrived in Japan, please give me a yell/tell me.
