Can you also say in regards to a compliment something like:
いえいえそんな事がないんです
or
いえいえそんな事がありません
?

The いえいえ is totally fine, but I wouldn`t insert が. The meaning changes. If you insist on putting a particle I guess you could put は, but really it`s far more natural and correct to leave the particle out. The same with using ありません.

Ah, so do you mean it would be ok to say:
いえいえそんな事ないんです
or
いえいえそんな事ありません

or even leaving it at: いえいえそんな事...
