Kanji for Sushi

Hi,
what is the kanji for sushi. So far I have seen three ways of writing it (寿司, 鮨, 鮓) but which one is used most of the time or is there a special case where you have to use one of them???
Best regards,
Jima

The first one is the most common way: 寿司

But sometimes there are multiple ways of writing basically the same thing.

聞く、聴く

答え、応え

足、脚

Some might be used more in literature rather then regular use, for example.

Best regards,
