Well not really. ß is different from ss, just as é is different from e and ë.

That is actually not true.
Today Frau Folden said that
in German there are words that
CANNOT be replaced by 'ss'.
One example she gave was Straße.

Well yes, can be used. But still ss has different sound than ß. When you don't have wedges and commas on your keyboard you write é as e too. But still it has different sound ^^.
