Vampire Knight has been mentioned so much that I think it's a given that you should read it (which you probably already have) XD
Um... some that haven't been mentioned yet: - Millenium Snow (or a Thousand Years of Snow) is done by Bisco Hatori (mangaka of Ouran Host Club) but the series has been left unfinished. -_- - Vampire Girl, it's a little strange and hard to follow, but it's got an intriguing atmosphere. I haven't been able to find the whole series though, since I -think- it's incomplete. - Midnight Secretary - I didn't personally like what I'd read of it, but it's to do with vampires. A bit of mature content.

 vampire knight manga very very very muchn i hope tat yuuki will end up wit zero, x kaname i knw tat zero loves yuuki n yuuki seems like loves zero too yaa,even though she used 2 luv kaname

yea i already read vampire knight, well actually im reading it right now. its one of my favorite mangas.
 and i really hope yuki ends up w/ zero! yayness! hmm i think i shall check out midnight secratary and some others that were mentioned.

I'm surprised no one recommended Model. It's really good if you like shojo-type manga.

Well, since my main ones were taken, I guess I have to go to my back-up (?!)
try Record of a Fallen Vampire. I don't read it yet, but my friend who does is practically obsessed with it  Yurikago ga hitotsu atta, yurikago ni hitotsu ga atta. Hitotsu wa futatsu ni natta, yurikago wa hitotsu kiri ni magirete. Hoshi hitotsu haka ba de yurete kietekuyo~

I wanna throw my vote in for Hellsing and Vampire Knight ^^b
Has anyone mentioned Blood Alone? It's only got four volumes out in English right now, but I really enjoy it. It's got some grammatical mistakes and such, but the story is good and the characters are awesome. It's also kinda cute, if you ignore the slight pedophilia undertones >.>
