Oh, and just right off the top of my head...no idea if this will work... xD
Get some daikon~
peel and cut into chunks the horizontal length of you palm, then halve.
Along w/ a variety of other vegetables (carrots, onions, etc) stew in a broth made of vegetable broth (should be dashi...but ...your asking for vegetarian, lol), soy sauce, and mirin until soft.
Soft when the daikon falls apart in your mouth, but not mushy as till the daikon looses it's shape and becomes completely unrecognisable.

Great on winter nights, or cold days when you need something too warm you up x]
Provides something equivalent too the feel you get from a cup of hot chocolate on a cold morning but with a more hearty and earthy tone. x]

Oh and also, w/ the daikon xD
you can slice a whole one uber thin~ then salt VERY heavily
Stash into a container (say a plastic tub)~
then cover w/ plastic, a plate, then weigh it down w/ something heavy
maybe a plastic coated dumbbell or something
allow too say a day or more x]

Easy-home-made tsukemono =D


*sea or kosher salt is better than your everyday table salt, lol*

Mmm, thanks for the spate of recipes, Yuujiro-san - especially for the cucumbers.

So simple and yet the one dish I still hadn't manage to guess how to make quite right. Normally I detest cucumbers and anything that has been in contact with the pungent little demons. But when prepared this way I can eat bowls of them. It was the salting step I had not thought of.
