Shio soup base (for ramen, etc). - 12-10-2008, 10:41 AM

This is quite a puzzler for me. Does anyone have a recipe for Shio ramen soup base? I don't mean "buy a packet of shio ramen", or "buy powdered shio soup base", I mean the real nitty-gritty level.

As far as I can figure it involves chicken stock, dashi stock, and salt, but without getting through a lot of bonito flakes to get the balance right I was hoping someone out there would either have an idea how to achieve this frankly amazing foodstuff, or know of a website which houses such a glorious thing (and if the site's in Japanese, point me to it anyway. Nothing fuels my ability to translate foreign languages as much as the promise of food at the end of the tunnel).

Thanks!

Erm... never really learned how to make shio-ramen.. soo...
i'm just going to speak w/ my culinary knowledge... xD

never heard of mixing chicken and dashi.. so i'd start off w/ just dashi
bring a pot of dashi to a boil, add a dash of soy sauce, possibly some mirin, and then add katsuo-boshi... or bonito, lolz

once the stock reaches a boil again, strain into a bowl of noodles
and hopefully it tastes right ^_^

Wouldn't that leave me with shoyu ramen though?
