Sushi ga dai suki desu yo. (I love Sushi.)

The following is some info that I did not know about the different ways sushi is made:

"There are various types of sushi: sushi served rolled inside nori (dried and pressed layer sheets of seaweed or alga) called makizushi (巻き) or rolls; sushi made with toppings laid with hand-formed clumps of rice called nigirizushi (にぎり); toppings stuffed into a small pouch of fried tofu called inarizushi; and toppings served scattered over a bowl of sushi rice called chirashi-zushi (ちらし)."

I think the rice is the hardest part, if you get it wrong you can't fix it.

Kmurry, you are right. When I make sushi, I always spend most time on preparing rice and cooking it. In my grandmother's Sushi recipe, she attaches much importance to rice cooking.


Why not exchange sushi recipe?

just because i'm bored... i'll go a little indepth w/ this tidbit x]

essentially there's maki, nigiri, and chirashi.

as far as maki-zushi goes.... you have
hoso-maki (thin roll) usually 6 pieces
ura-maki (inside-out roll) usually 6-8 pieces
futo-maki (fat roll) should always be 8 pieces
chuu-maki (center roll) usually 4-5 pieces
and te-maki (hand roll) >.>'' one piece...

as for nigiri...
you have gunkan nigiri, and w/ and w/o the obi (that little seaweed that you tie the neta to the shari w/)
oh and yeah... there's also inari.. although i do personally consider inari a form of nigiri

and then there's two styles of chirashi as well
forgot their origins, but in one style you mix the toppings w/ the rice, and in the other style you just decorate it on the rice... think the latter might be northern and the former more southern (i could be wrong on this; please correct me if i am)

Hm..... it's not so much that if you get it wrong.. you can't fix it... but more that it's very difficult to get it right...
from the washing of the rice, to the right amount of water and cooking time
to the proper preparation of the shari-su to the mixing and the cooling and even the storage of the rice all serve to make it much more difficult to prepare...
although, that process isn't what makes shari the most important ingredient....

to put it another way... the rice is the main course while the neta (topping) serves more as a side than anything else

first thing you should learn when making nigiri-zushi is the order of importance
1. rice is the absolute most important thing; you can't make good nigiri w/ bad rice
2. the neta comes second. if the rice is good, then the neta can be ... 'ok' ; good neta doesn't make up for bad shari
3. the least important component of nigiri-zushi is the actual hand-form, or the manner in which it's shaped. as long as your shari and neta are good, your nigiri doesn't have to be perfect. likewise, if your shari and/or neta are bad, a good nigiri won't save it. >.>''

Uhhhhhh this thread is making me hungrey *tummy growls* Q_Q. I love fancy tuna but they don't have very good tuna or fish where I live so I'm kinda catious about eating fish here.
