Hakata huh? That's pretty cool. That's where the famous Hakata ningyou originated right? So, their tonkotsu style ramen is good? I'll have to go there and try it one day.

Kimichi ramen is by far my favorite. My mum makes me kimchi herself sometimes.

kimchi raamen is not so popular in japan.
my favorite is shoyu. when people just say raamen, that means shoyu raamen.
btw, what is stamina? i've never heard of the name.

I just love kimchi in general. I eat it with like...everything. lol. So naturally when it's combined with ramen I'm ecstatic.

Stamina ramen in Tenri is famous. People in the kansai area know about it. It has garlic and some other stuff in it. Some people add this hot red paste and this ginger paste with it.

i also like kimchi, but not in raamen!

i live in eastern japan, the taste here is totaly different from kansai area.
though, stamina sounds good.

Yep, they're famous for inventing and/or perfecting the tonkotsu style, so much so that it is interchangeably called Hakata-style. There are tons of street stands in Hakata with that style of ramen.









The broth is boiled for many hours with pork, pork bones, garlic, and other spices. It is becomes an opaque golden color, rich with roast pork flavor.

I wonder, of all the people responding Miso and Soy sauce ramen, which are more popular around Tokyo area, have you tried Hakata/tonkotsu ramen?
