If you are in a pinch to find kombu or katsuobushi, vegetable stock like you said, or even chicken stock would do. There's also Wonton soup base available in Asian food stores, as replacement for dashi.

wow, they look so good + theres nothing wrong with the video now.

@at vespered my friend found a store in england that does ramen and many other japan food/drinks ie sake lol, i think its in piccadilly Japanese food | Japan Centre: online food, magazines, books & music shopping
