覚える　and　思い出す
我々　 and　私たち?

I'm guessing 覚える is to remember something (like how to cook something), and 思い出す is to remember something like a memory or emotion. I'm probably wrong though.

As for 我々 and　私たち, a little more insight? Is one more polite? Or would you use them in different situations?

You are not wrong on 覚える and 思い出す though this seems to be a week point for many Japanese-learners.

覚える has a strong connotation of "learning and mastering something (often by repetition)". As a result, you will be able to remember it. It is not used for "reminiscing", which is what Japanese-learners tend to use the word for. The word is pretty much fact-based.

思い出す , on the other hand, is basically all about reminiscing. Things from the past are crossing your mind. The word is essentially feeling-based.

Your second question is not nearly as easy to answer. Politeness, however, has almost nothing to do with it. (If I may say this, Japanese-learners talk about "politeness" way too often.)

The two should be interchangeable nearly 100% of the time. 我々 tends to carry a more masculine tone than わたしたち but the masculinity, if needed, can easily be expressed by the content of your statement without relying on the pronoun choice. The choice also largely depends on personal preference as well.

Another important fact is that how one says "we" pretty much depends on how one syas "I". Are you following me? If you are a young man who addresses himself オレ, then you are not going to use either of the two plural pronouns in question because you will naturally use オレら or オレたち.

I may suggest that you use わたしたち for writing for now and use ボクたち for conversation (if you are a male). 　我々 would be hard to use unless you are already near-fluent as it would require certain tones in the rest of the sentences.
