こんこん！
こんこん is short form of こんにちは or こんばんは。I'm not sure if other people use, but my friends say that too

遅くなってごめんなさい！

今日の天気 は いい です。 涼しい です。 日本の夏 は とても むしあつい です。 でも 日本のあき は あつくありません。

今日は天気が良いです。そして涼しいです。日本の夏はとても蒸し暑いですが、日本の秋は暑くありません。

今日の天気は良いです。 is OK, but in my opinion, 今日は天気が良いです。better.
今日の天気は良いです sounds like you had a bad weather day before, so now you say today is good.

And 天気 is weather but it's just for sunny, cloudy or rain like that. Not for hot, warm or cold. So if you were to say "the weather today is good because it's cool"... You don't use 天気.

あき は げんき です。 あき が 好きます。 夏 は 好きだない。

Umm... who is genki in Autumn? or Autumn is genki?
Maybe...

僕は秋には元気になります。秋が好きです。夏は好きではありません。

You need to use the same form in a paragraph. If you used です、 then you need to use polite form for next sentence too. 秋が好きです→夏は好きではありません。

これは私の今日の日本語の練習です。毎日私はちょっと日本語を書きます。勉強してみます。

This is Oronamin-C. It's a Japanese drink containing vitamins and, most importantly, caffeine.
これ は オロナミンーC です。 日本の ドリンク です。 その なか に ビタミンとカフエイン が はいって いて。

中にビタミンと、一番重要な成分であるカフェインが入っています。

入っていて = If you finish sentence with ～で、～いて、readers will expect that there will be continuation.
Plus I think you don't really need その before 中。

Some Japanese energy drinks have a strange taste to me. Maybe Western energy drinks taste strange to Japanese people.
私 に いくつか 日本の ビタミン ドリンク は わるい 味見 います。 多分 日本人 に 西側の ビタミン ドリンク は 悪い 味見 います。

いくつかの日本のビタミンドリンクは私にとっては変な(or 奇妙な，不思議な，一風変わった, 悪い）味がします。　多分日本人にとって欧米の（or 西欧の）ビタミンドリンクは変な味だ（or まずい)と思います。

I like オロナミンC too =)
But I think all the other Japanese energy drinks are bad taste even for Japanese people. lol

Oronamin-C tastes good. I like it.

Lately, I've seen Red Bull in combinis. "Combini/Kombini" is the Japanese word for convenience store.
最近、 コンビニ の なか で Red Bull を 見ます。 コンビニ は 新し 日本語の ことば です。英語 は「Convenience store」 と います。

最近、コンビニでRedBullを見かけます。コンビニは新しい日本語です（You can omit の言葉 here. But it's not a mistake to put there)。英語では「Convenience store」と言います (いx2)。

見ます here is not suitable.
見ます = you had a intention to see it. 見かけます = You see them whether you wish to see or not.

We say コンビニエンスストア too.　コンビニ is just a short form for it　

I prefer Oronamin-C to Red Bull.
オロナミンーC は、 Red Bull より いい です。

私はRedBullよりオロナミンCが好きです。

One thing I always miss out on in learning from a book is the real way that Japanese people speak to each other. Books tend to teach you way too formal Japanese for everyday use.

As far as こんこん、can I use this when greeting friends?

Um, I use it just like "Hi hi". Especially online. But I'm not sure if other people use this too. Maybe only my friends haha.

Did you know that こんこん can be a knocking sound? For example...a bathroom door. So first time when I use this to my friend who is on his 40's, he replied me "入ってます". I hope you can understand it. It was his joke He knew that こんこん was the short form of こんばんは、but he took it as the sound of knocking on a bathroom door to make it a joke.

One thing I always miss out on in learning from a book is the real way that Japanese people speak to each other. Books tend to teach you way too formal Japanese for everyday use.

Umm. But it is very difficult for foreigners to use informal Japanese without offending native Japanese speakers. I think it's the safest to learn polite form of Japanese first. ^^; And... Japanese adults use formal Japanese to their friends too (This is what an Amerian guy couldn't believe). So formal Japanese isn't useless.

できていますか is... you were able to do, or not.

These are something like "Could you possibly ...?" Very polite.

私は沖縄に住んでいます。 would be more natural. 来ています sounds like you meet someone in reality, and saying "I come from Okinawa".
